Instruções:
- Faça um purê com as batatas cozidas, misture com o ovo e regue com o caldo de batata quente.
- Adicione o açúcar e o fermento, misture e deixe descansar por 10 minutos.
- Adicione o sal à mistura de batata e misture.
- Adicione a farinha peneirada em partes, acrescente o óleo vegetal e amasse até obter uma massa homogênea. Não adicione muita farinha para que a mistura não fique muito espessa.
- Cubra a massa e deixe descansar por 1 hora em um local quente.
- Para o recheio, pique os ovos cozidos, as ervas e a cebolinha verde. Misture, regue com a manteiga derretida, tempere com sal e pimenta.
- Forme pequenas panquecas, recheie, feche e frite dos dois lados até dourar.
Sirva com creme azedo, manteiga derretida e, se preferir, substitua o pão, podendo servir como almoço ou jantar.
