Ingredientes:
– 300g de camarão pequeno e limpo
– 700g de mandioquinha
– 1 cebola grande
– 2 colheres de sopa de azeite de oliva
– 1 litro de água
– Temperos: alho, pimenta do reino, 1 colher de sopa de caldo de frango e sal
Modo de Preparo:
1. Corte a mandioquinha e a cebola em pedaços médios (se preferir, descasque a mandioquinha, mas aqui em casa a gente usa quase tudo com casca).
2. Em uma panela, coloque a água, o azeite, o caldo de frango, a mandioquinha e a cebola e deixe ferver até a mandioquinha ficar bem mole (em torno de 20 minutos).
3. Enquanto isso, tempere o camarão com o alho, pimenta do reino e sal e deixe pegando sabor.
4. Quando a mandioquinha estiver mole, reserve a água de cozimento, escorrendo-a em outro recipiente, pois você vai usá-la daqui a pouco.
5. Enquanto a mandioquinha esfria, frite os camarões numa frigideira com um fio de azeite.
6. Com a mandioquinha já mais fria, bata no liquidificador até obter um creme espesso e coloque-o de volta na panela, com ajuda de uma espátula de silicone.
7. Despeje os camarões fritos em cima do caldo, com o azeite de fritura mesmo, e misture bem.
8. Agora é a parte em que você decide a textura do seu caldo: se preferir mais grosso, mantenha-o assim, caso contrário, adicione a água do cozimento da mandioquinha aos poucos, mexendo delicadamente até alcançar a consistência desejada.
9. Quando estiver quente o suficiente e na textura desejada, apague o fogo e sirva com um fio de azeite por cima.
