Ingredientes:
– 1/2 xícara de óleo
– 3 ovos
– 1 xícara de açúcar (eu coloco um pouquinho menos)
– 2 xícaras de farinha de trigo
– 1 xícara de leite
– Essência de baunilha (opcional)
Modo de Preparo:
1. Bata no liquidificador ou à mão os ovos, o óleo e o açúcar.
2. Em seguida, adicione o leite e a farinha de trigo peneirada. Misture bem.
3. Coloque o fermento e a essência de baunilha a gosto. Misture novamente.
4. Asse em forno preaquecido a 200°C por cerca de 40 minutos.
Recheio:
– 2 abacaxis cortados em cubos (usei só 1, achei pouco)
– 1/2 xícara de açúcar
1. Coloque os cubos de abacaxi para ferver com o açúcar até reduzir um pouco.
Recheio de Brigadeiro Branco:
– 1 caixinha de leite condensado
– 2 caixinhas de creme de leite
– 3 colheres de leite em pó
– 1 pacote de 100 gramas de coco ralado
1. Leve ao fogo médio, mexendo sempre até engrossar e começar a desgrudar do fundo da panela.
Montagem:
1. Divida o bolo ao meio para rechear.
2. Molhe a primeira parte com a calda do abacaxi misturada com água e leite condensado a gosto.
3. Coloque os cubos de abacaxi e por cima o brigadeiro branco com coco.
4. Coloque a outra parte do bolo, molhe com a calda e espalhe um pouco do brigadeiro por cima.
5. Cubra com coco ralado e leve à geladeira por algumas horas antes de servir.
