Bolo de Cenoura com Brigadeiro

Ingredientes:

3 ovos

2 xícaras de farinha de trigo (peneirada)

1 e 1/2 de açúcar

1 xícara de óleo ou azeite

2 cenouras picadas

1 sopa de fermento em pó

1/2 xícara de água

Modo de Preparo:

No liquidificador, bata as cenouras, os ovos, o açúcar e o óleo por cerca de 2 minutos.

Em outro recipiente, coloque o líquido batido e vá adicionando a farinha de trigo peneirada aos poucos, mexendo delicadamente de baixo para cima. Acrescente 1/2 xícara de água. Por último, adicione o fermento em pó e misture suavemente.

Pré-aqueça o forno a 180 graus por 10 minutos.

Despeje a massa em uma forma untada (com manteiga e farinha ou achocolatado) de 30 cm de diâmetro. Asse por aproximadamente 40 minutos (o tempo pode variar de acordo com o forno; fique atento, mas evite abrir o forno antes de 30 minutos).

Para verificar se o bolo está pronto, espete um palito no centro; se sair limpo, está pronto. Não retire completamente do forno; desligue-o e deixe entreaberto para evitar choque térmico e murchamento.

Brigadeiro:

1 lata de leite condensado

1 caixa de creme de leite

5 colheres de chocolate em pó

Misture todos os ingredientes e leve ao fogo até obter um ponto de brigadeiro mole. Deixe esfriar.

Após o bolo assar, faça furinhos na superfície e despeje o brigadeiro sobre ele. Decore com raspas de chocolate ou granulado, conforme preferir.
